Recipe from Sep 8, 2015 meeting
Jill’s Chicken and Wild Rice Salad
6-7 chicken breasts cooked and cut up into small cubed pieces
1 box Uncle Ben’s Wild Rice with herb seasonings, cooked
1 can crushed pineapple, well drained
1-16 oz. can mandarin oranges, well drained
Slivered Almonds, toasted in butter
Mayonnaise
Best if sits for a while but add nuts at the last moment before serving
Jill’s Fancy Slaw Salad
Combine:
1 pkg Angel Hair Cole Slaw
1 pkg Brocccoli Cole Slaw
1/8 cup finely chopped red onion
1 pkg frozen peas—uncooked
Golden raisins, about 3/4 of a box
1 jar honey roasted peanuts
1 ½ cups cauliflower cut into very small pieces
Brianna Poppy Seed Dressing—not the whole bottle
Mix together—putting nuts and dressing in at the last minute.
Jill’s Zucchini Bread
3 beaten eggs
3 cups flour
2c sugar
2 heaping cups grated zucchini
1 cup oil
1t. Vanilla
1 t. cinnamon
1 t. nutmeg
1 t. salt
1 t. soda
¼ t. baking powder
1 cup sour cream
1 cup nuts
Mix well and bake in greased and floured pans 1 hour or more at 350.

Black bean, rice and veggie salad
Stir olive oil, lime juice and cumin to blend. Add everything else and stir gently to coat – season with salt and Pepper. Makes 5 cups (4 to 5 servings).
¼ c extra virgin olive oil
¼ c lime juice
1 tea ground cumin
1½c cooked Basmati rice- cooled
1 can black beans – rinsed and drained
1c finely diced (or shredded) carrots
¾c. frozen corn
¾ c finely chop. Tomato
¼ c minced Italian parsley
¼ c minced fresh cilantro
2 T. finely chop red onion.
